Hi all, advice appreciated please -
Would like to make croissants for tomorrow morning and need some advice. Breadmaker book instructions require dough, roll out, dot 2 thirds with butter, fold, roll again, dot again, roll again, dot again. Cover. Rest 30 mins in fridge.
Repeat 3 rollings and dottings again. Shape into croissants.
Leave to prove until doubled. Brush with egg. Bake.
Do you think I could do this method until shaped, then put in fridge until the morning then take out? Would it still double? Or would I be better to leave them out overnight in back kitchen? Covered!
Would love to know your thoughts.

yes you can. you can also freeze them at that stage and defrost on a baking sheet covered in cling film and brushed in oil.0
