Put them in a sealed freezer bag and put the bag into a bowl of cold water. Change the water every 10/15 minutes until they're defrosted. Don't use warm water though as any bugs will multiply quicker, cold tap water is 'warm' enough to defrost meat. It's quicker than leaving them out on the side to defrost.

If you're going to be slicing the chicken breasts then do it while they're still partially frozen as they're easier to slice and defrost really quickly once sliced.
Just run, run and keep on running!

The chicken is SKINLESS does this make a difference to the cooking time?

    Only the cooking time uncovered.

I would increase the cooking time under the foil and reduce the uncovered cooking time, maybe to the last 5 minutes only.

I'm waiting to hear what it tastes like.
