Has anyone got the recipe for Salt and Pepper chips what you get at the Chinese chippy?
I have looked everywhere and I just cannot find one.

If you're talking about dishes like Salt n Pepper shrimp or ribs, it's not too tough. Mix 1T Salt and 1 T white pepper with an egg white and 1tsp flour. Throw in your shrimp to coat it. Fry in a wok at really high temp til slightly golden (You can only fry 6-8 at a time) Serve immediately!!! I haven't tried the short ribs this way but the cooking time would be longer.
there are several search results to salt and pepper chinese chips recipe but this one looked like a first seasoning mix to try.

When i do it i'll:
finely chop onion(s)
pepper(s)
chillies (big ones not birds eye)
and i'll mix salt, pepper, mixed herbs and spices and chinese 5 spice together. throw the veg in the wok, lightly fry and mix in the spices. Once it's done just dump them on the chips.0 -

Never heard of salt and pepper chips - for salt and pepper chicken I use chinese schezuan pepper - toasted then ground with sea salt - tossed with the fried chicken to coat then topped with the onion garlic and chilli mixPeople seem not to see that their opinion of the world is also a confession of character.

Easiest way to make salt and pepper chips is to Deep fry your chips, then heat a wok with some vegetable oil. Throw in some chopped onions and sliced chillis. Then add the chips and sprinkle Salt and Pepper seasoning to your taste. Only cook for a minute or two and your done.
Salt and Pepper Seasoning
1 Tbs Salt
1 tsp Cayenne Pepper
1 tsp Garlic seasoning
2 tsp MSG
1 tsp Ground Szechuan peppers
1 tsp White pepper
Heat the Szechuan peppers in a dry wok for a minute. This will release the flavour. Then add all ingredients to a mortar or a liquidiser etc until it looks like sand. This will keep for months in a secure jar or shaker. You will want to take it easy at first as it does seem saltier than salt if thats possible!0 -

So the recipe for the salt and pepper seasoning would be
Salt and Pepper Seasoning

2 tsp sugar
1 tsp Cayenne Pepper

I am guessing these chips are twice fried - once to cook the potato, then "tempura'd" with a cornflour, seasoning and water batter.Value-for-money-for-me-puhleeze!

From any Chinese store but it's not actually very good for you. I cannot eat any food containing MSG (which rules out many Chinese Takeaways) as I get heart palpitations and hot flushes akin to the start of a panic attack. Actualy MSG occurs naturally in many foods such as tomatoes, celery, seaweed etc. You can get rid of the MSG, but it wont taste the same as the normal chinese takeaway.
And as far as the chips go. No, they are just chips done normally and then stir fried for under a minute in a salt and pepper mix. Excellent for after a few beers! :beer:0
