Sugarpaste/fondant icing tips

Hi all, I'm making a Lego minifigure cake for my boyfriend's birthday, which I'll be covering in rolled sugarpaste icing.

The problem is, I've never used sugarpaste icing before and was wondering whether anyone had any hints or tips to prevent me getting into a tizzy and throwing the cake across the room or something just as unhelpful!

Thanks in advance,

Caroline

  • Hi there,

Sugarpaste is dead easy to work with. Just a couple of pointers.
Make sure you knead it well before rolling out. Its easier to use when its warmed up a bit.
Don't roll it too thin and use icing sugar to make sure it doesn't stick.

When you place it on the cake kinda just let the icing drop round the edge and then smooth into place using your hands.

Good luck, post a piccy when its done. Would love to see finished cake. x

I personally don't use icing sugar, I grease the worktop and rolling pin (unless its wooden) with some trex or white flora (rub off the excess with kitchen roll), this creates a really good non-stick surface. Keep the sugarpaste moving as you roll it, only do a couple of rolls then turn it round a bit, this also helps prevent sticking. Don't turn it over though. If you find you do need a little something extra to prevent sticking then I find cornflour works much better than icing sugar as it doesn't go sticky like icing sugar will if there's any excess moisture present.
  • Thanks guys! There is so much conflicting information out there on the internet... I'll just have to give it a try and see what happens. I'll definitely post a picture when I'm done, hopefully it'll be something I can be proud of!
