    Hi All, I'm sure there are loads of recipes dotting around but a friend passed this on to me. Approx 50g fresh basil, 50g toasted pine nuts, 25g grated parmesan, clove of garlic (but I put in 2, cause I love garlic & I'm trying to keep colds at bay) 4 tblsp olive oil (I used a nice peppery greek extra virgin from Sainsbugs) salt and pepper.

    Put the whole lot in a food processor, whizzed for a while, added a few drops more oil, to my preferred consistency.

    After I cooked and drained the pasta, put it back in the pan and stirred in a couple of spoonfuls of the pesto and served with crusty bread.

    The above quantities made approx 175g of pesto, so I took Flibsey's advice and stored in a screwtop jar, putting some extra oil on top. Will have the rest tomorrow for lunch on bruscetta. Yum, Yum.

    not made it myself, by DD made broad bean pesto this year if anyone wants I can ask her what she used apart from the broad beans, I know my DGDs loved it, but that might be more due to the fact they grew the beans and picked them, think kids like to see things through to the end lol

    Can I say that pesto tastes so much better if instead of parmesan you add pecorino cheese? Manchego is also ok, as it is a seasoned dry sheep cheese. Enjoy!
    Finally I'm an OAP and can travel free (in London at least!).
