Advice on buying a mattress

I'm trying to decide between two mattresses and wondered if anyone had an experience of the quality of either of these makes. The first is from Marks & Spencers (whose beds I think are made by Relyon), the second is Warren Evans.
I want a bed that's not bouncy and is quite firm, but very soft (in terms of comfort, not springyness) to lie on. I'm also keen to get one that has very little fire retardant in it - the Warren Evans looks good for this, but I've been unable to find out quite how the M&S one fares for this.
The first is from M&S - Comfort 1800
The second is Warren Evans - Organic Natural
