Braising v Stewed

I usually use braising due to a bad experience with stewing steak. Horrible it was, horrible!

I usually use it to make goulash or maybe an stew. I don't make them very much as I can buy mince cheaper, but would stewing steak be okay for this and taste nice? I would cook it for about 2 hours I would imagine on the hob.

    Sorry to hear you had a bad experience.

    What was horrible about your previous experience wih stewing steak - was it taste, texture, fattiness, toughness....? How did you cook it?

    From what i remember, it was a load of gristle and hard to eat. Made it on the hob, most likely goulash or stew (can't member now) and would have cooked it for about 1 1/2 hours. It might have been that particular stewing steak, but can't really afford to buy it again if it's going to be a meal wasted.

    I interchange stewing & braising steak depending on what looks like best value in terms of price combined with quality
    I also like to buy it in a large piece/pieces & trim & cube it myself (hate gristle & fat) rather than buy the pre-cubed stuff

    if you look out for a good quality stewing steak it should be just fine :)

    Don't be put off all stewing steak because of one bad experience.

    I buy stewing steak from a butchers on the market. It's lean and gristle free and a delight to eat. I made a stew yesterday - on the hob because I left it too late to put it in the SC. I always cook things like that long and slow and it was melt n your mouth delish. I can't remember how much I pay but it's not as dear as the supermarkets, I don't think - but even if it was - I'd still get it from my butcher.

    I always trim my steak before cooking it and I had 1 1/2 lbs of meat and took off 2 of the smallest bits of sinew you can imagine. I wouldn't buy stewing steak from a supermarket though (mind you, I don't really buy ANY meat froma supermarket now :D)

    Where are you BTW - someone may be able to direct you to a fab butcher :D

    Thats exactly the same for me! I also find it is cheaper if it is not already pre-cut.:D

    Watford. There's one butcher near me, but he looks a bit crap. Went into Watford Market on a Saturday once, but it was a bit scary. So many people scrambling around and there were no labels on the meat, and cos it was so busy, felt too scared to ask any of the butchers anything.

    There is a farm shop that I could walk to from my house, never been in there though. There's no animals on the farm except for horses, so where's their meat coming from? :confused: They say they have prize winning sausages.
