Dried beans

This seems like a silly question, but I'm wondering whether it's possible to use the dried beans from the ones I've grown this year that have gone too far? I often let them mature, dry them & use them as seed the following year, but can I use them for cooking &, if so,how? I think it should be possible but I've never been sure!

Yes in a way but not altogether because the parent seed were a heirloom special variety from a seed exchange. They're kind of mottled!0

I wasnt sure about this either as I have had recently had an op and had to let rather a lot of runner beans over mature, thankfully i got the first lot in and blanched and froze them. I checked on the net and found that it was ok to use runner beans so I have de-shelled them and blanched them and frozen them. Dont know how to do links but this was the site I found
