Would anyone be able to advise me on which is the correct HMRC address/department to write to if you want to nominate a property as your main home?

You can find out all you need to know at http://www.hmrc.gov.uk/index.htm
You can even open an account in your own name and amend many details like this when you need to. Be aware that while setting up an account is instant it takes a few days to get your activation password. This is sent to the address you nominate.0
