Alcohol in baked cakes - Vodka?

Hiya,
I've been looking for ideas to make a alcohol cake to take to a friend's party and after reading the boards and looking online, I've finally been inspired to make a vodka cake. But is it doable?

I've countlessly read about people making fruit cakes and feeding rum, brandy, etc into it over a period of days and weeks... I was hoping to make petite fairy cakes or 2 square sheet cakes instead, either way, should I add vodka to the cake mix or wait til they're baked and feed in a few drops of vodka? I don't want to feed them if they'll end up soggy :(

I've considered adding vodka to a topping instead (cream/icing/chocolate sauce), but decided against it as I want to keep the costs down as I'm looking to provide enough cake for 50ish people at the party.

What's the best way to include the vodka?

    I think you'll find it works in rich fruitcakes principally because it gets into the fruit and is retained. In a sponge cake I think you'll end up with nothing other than a soggy mess..... such as is often the base for a trifle!!

    think i'm in agreement about the cakes. don't think vodka would work.

    as well as the vodka jellies why don't you make a vodka watermelon? cut a hole in a watermelon and fit a funnel into it, over the space of a few days keep glugging in the vodka. serve cut into big wdges

    Also, vodka has very little taste so why bother? You could make some sort of liqueur filling or icing though I expect. But even then...raw alcohol would probably just overpower the taste of the cake. Why not go for good old reliable chocolate cake and foind some sort of alcoholic chocolates (champagne truffles??) to decorate it with instead?

    There is a recipe in a Delia Smith book for a dark chocolate tart - dead easy to make and you can add rum to the chocolate although I tend to add Grand Marnier which works equally well. It is rich mind.

    Vodka has no taste and it won't work in a sponge cake at all although it works in jellies and watermelons as others have suggested.

    Alcohol cakes I can think of of the top f my head are Nigella recipes.....her bounty cake has coconut liquor in it, and the rococo cake is boozy too, and excellent for parties.

    Id persnally do somethng like a chocolate spnge wih a rum/chocolate liquor heavy frosting, or a honey cake with whiskey frosting would be delicious (hm, might do tht this weekend now!)


    The only way I'd do vodka would be in the forsting...and personally, I'd not use a preumium brand. I'd do it as a cocktail...so instead of a screwdriver to drink, an ornage cake with a vodka frosting. Cocktail themed cupcakes culd be fun, of you like cupcakes...

    I've thought about the vodka jellies, that's my usual party treat so wanted to give it a different spin for a change. I do like the watermelon idea, but I can't guarantee that the other guests would like it to. But they are a bunch of students after all, they'll eat anything with alcohol in it!

    I've thought about a vanilla vodka flavour frosting, and I'm especially liking the bounty cake as Malibu seems to go down well with the group. Or even a chocolate cake with a Bailey's frosting perhaps!

    I'll look up the Delia and Nigella recipes and see if I can find any other little gems too. Thank you all for your tips so far :)

  • I made big MSE chocolate cake in the microwave using the mug cake recipe (I'll have to link it later), tripled the quantities, added 1tbsp of nutella and mixed in a microwaveable bowl, cooked on 950W for 3 minutes.

    The night before, I soaked strawberries and raspberries (chopped) overnight in a bowl of 150ml mid-range vodka, strained the berries in the morning and mixed half of the remaining vodka in with 1&half tbsp of nutella to make a slick chocolatey paste.

    While the cake was warm, I halved it widthways into two sandwich rounds, spread the chocolatey paste on both halves, scattered the chopped fruit, put the rounds together and chilled in the fridge before taking it to the party. It went down a treat!

    As for the other drop of the remaining vodka from the berries infusion, I drank it before leaving the house ;)
