Dorset Apple cake is nice - http://www.bbcgoodfood.com/recipes/2044/dorset-apple-traybake

I made it in a big ceramic dish and scooped it out while it was warm like a pudding and had with cream, though Dream Topping will be ok!

If you have a large dish, make double quantity and it keeps for a few days in the fridge ok.

I think I would make a upside down apple cake. Slice the apples in the bottom of your basin/tin and pour over some syrup, you could add a few glace cherries as well, a bit like a pineapple upside down cake. Then I would make up a normal sponge mix using brown sugar so it is a bit more toffee like. If you have any cinnamon/mixed spice a sprinkle of that in the cake mix would be nice. Put the mix on top of your apples and cook.
Serve warm with dream topping (not quite sure what that is but it has been suggested to be used instead of cream above so would be ok here as well!)
  • How about a nice retro mandarin gateau? Make a normal victoria or genoese sponge, mix up a quantity of buttercream with a bit of zest and juice from the clemantines, drain the mandarins and add some to half the buttercream and spread this inside. Then decorate the top with the remaining mandarins, glace cherries and buttercream rosettes piped on to fill the gaps or just spread all over with buttercream and decorate.
