Alternative to Caster Sugar?

I'm just wondering whether I can use icing sugar as an alternative to caster sugar when baking muffins? I'm low on caster sugar but have a big box of icing sugar which I hardly use and I don't really want to go out and buy more caster sugar if I can use the icing sugar ;) I was going to use granulated but OH has managed to get quite a bit of coffee in with it :rolleyes:

Oh, and if I can do I have to change the quantities?

  • Yes, you can use icing sugar - as long as you measure it by wieght and not volume, as some of the American recipes state.

    Granulated isn't always a good substitute in recipes, but icing sugar should be fine.

    My mum bakes quite a bit and if she ran out of caster sugar she would blend granulated sugar in the blender (not too long or you end up with icing sugar).

    The TWG states in her Create-A-Muffin that you could sub the sugar completely with honey or treacle or golden syrup if you are using measuring cups, but decreace the other fluid content.

    I use granulated in all my baking where white sugar is called for and never had any complaints. It's cheaper than caster.

    I use granny sugar for everyday baking and have had no problems with it. I only use caster for very special dishes and when I'm cooking to entertain.

    In cookery lessons at school, if the recipe called for caster sugar and we only had granulated we were told to put the granulated sugar in a tied plastic bag, and run the rolling pin over it several times, to make it finer.

    Granulated sugar which you buzz in a processor, or crush in a bag with a rolling pin would definitely be fine.

    I'm not sure about icing sugar, I would have thought it would be too fine - however, sounds like Toxic LEmon has tried this successfully, so I would be very interested to hear your experience if you try it.
