Very specific SC recipes needed

Gave Mum a small SC for xmas - just does enough for two as she lives alone and will halve and freeze what she cooks. SHe enjoyed my 'invented' veggie chilli during her visit last week, and I gave her a copy of the somerfield magazine as it had a few adaptable ideas in that.
Trouble being her eyesight isn't too good as she has a cataract and macula degeneration, and she is a veggie diabetic and needs low fat recipes.
ANy large print cookbooks out there? Failing that I am looking for useful recipes which I will print out in a large font. I think she would prefer this as she would prob. hate anything which said 'LARGE PRINT' on it! I have this planned for her birthday in May.
Mum was delighted with the SC :) but I am sure she is looking to me for a supply of recipes!
BTW she detests quorn (good on her) and doesn't really like TVP either.

    I have a SC e recipe book which I can forward to you if you pm me your email address. I haven't studied it in depth yet I'm afraid but it has 470 recipes so some should be of use and at least you can enlarge and print the pages for your mum.
    Wandered away from the MSE track for a while but am back and on a mission! Debts cleared nearly £18k. Now to start saving ...
