Fresh lasagna, any idea?

I'm intending to make my own lasagna sheets today have all the gadgets and ingredients does anyone have any advice? I usually buy those dry sheets.
I guess after making the sheets I boil them and then do i need to dry them before use?
I will be trying to make other shapes, macaroni, spaghetti, etc so any advice most welcome.:)

    Hi halloweenqueen - no you don't have to dry them before cooking. You will need to make good use of space, because pasta just seems to grow from a small ball of dough to miles of flat sheets etc. I used to hang my pasta over the backs of the kitchen chairs impersonating a laundry look. You can flavour it with tomato (using puree) or spinach (frozen works well). Children enjoyed the making - ideal for a wet day as quite time consuming but very therapeutic and always tasted delicious :D:D . Never made macaroni - tagliatelli excellent & ravioli same. Look forward to hearing how it's going & other recipies to be posted. Might inspire me to get out my gadgets - bought in car boot for £5.00 many years ago. :)
  • Thanks!:D Bought an attachment to my kenwood and it LOOKS straightforward!! They gave a recipe and that was as far as it went! I'll probably end up with an 8 foot square lasagna! Which will cover most of march so perhaps I'll enter it into the March grocery challenge!

    Interesting thread. Have never made fresh pasta, may give it a try now. Would be interested in people's lasagne recipes though. Love traditional lasagne but would like to try other variations maybe using chicken.

    I was given a pasta maker ages ago that I've never used. I do like lasagne too and might be tempted to dust if off. How easy and money saving actually is it? I've always thought it'd be a bit too fiddly so I've not been tempted yet.

    No need to boil fresh pasta for lasagne. It will "cook" in the oven along with the other ingredients :)

  • Great! Thats even better! No boiling! Trying to do it more for the taste and more natural ingredients than money saving although its basically only flour and eggs so probably quite cheap!

    If you don't boil the lasagne sheets first, make sure your white sauce/tomato sauce mix is fairly wet, otherwise the lasagne will be very dry.

    If you decide to boil the sheets (I do - on the rare occasions that I make my own pasta) make sure you add them one at the time and cook them only for a couple of minutes. Also very important is to add a couple of tablespoonfuls oil in the cooking water to prevent the pasta sheets sticking.

    Just want to check .. if it's fresh lasagne, made with eggs? I've always found that the bechemel sauce & tommie sauce provide enough moisture for the lasagne.

    Are we doing this differently? ;)

  • Well I made the lasagne, its so easy with the kenwood, make the mix in the bowl, whack the attachment on the front and put in the shoot and out come the pasta sheets! i didn't boil them and found that with the cheese sauce and tomatoes in the mince mix it was fine - I was quite smug that nobody realised it was homemade pasta and thought I'd bought that fresh stuff hee hee! Thanks to the help on here it was a success and an easy cheap meal. Thanks!:D

    Oooh I really am jealous HQ - always wanted to make my own pasta but could never justify buying the gadget! :D
