The core won't harm you, but will be incredibly chewy. If I was you I'd lift out the kidneys let them cool so you can handle them and use a pair of scissors to snip off the kidney around the core and then put the kidney back in again. You should be able to tell the kidney from the steak as the steak will be textured but the kidney will be smooth and more rounded.

I have only managed to find three bits of distinguishable kidney and I can't see any white bits in them! ARGH! I did such a good job of cutting up the kidney, steak and mushrooms uniformly that it is impossible to get all the kidney...

Just wanted to update...
Thanks to those who replied.
The pudding was absolutely fine without having removed any of the white bits from the kidneys - they were completely tender, not a tough bit in sight, and the flavour was good (so I'm told - I thought it was disgusting but I hate kidney!)
So apparently I didn't need to be angry with Nigella :rotfl: it was obviously fine not to remove the white bits!0 -
Glad it was OK,The white bit is like a muscle sinew in the kidney & can easily be cut out with scissors,then what I do is soak the kidney (same with liver) in milk overnight to leech out the impurities & excess blood.
The drain,pat dry & coat in seasoned flour before frying the meat off.0
