It doesn't have a name - I was just experimenting today
This fed me as a main course and side dish for 3 others
½ red onion
½ courgette
½ red pepper
½ green pepper
½ chopped tomatoes
garlic
oregano
basil
a little olive oil
Balsamic vinegar or try Lea & Perrins
white sauce
cheddar
Fry garlic and herbs.
Add onion, courgette and peppers. Saute till slightly browned
Add chopped tomatoes. Mix together with balsamic vinegar and season to taste.
Pour into an ovenproof gratin dish.
Make a basic white sauce. but slightly thicker than if you were making it for a lasagne. Pour over the vegetables and the sprinkle grated cheddar all over.
Bake in oven for 30 mins at 190
I had it with sauted potatoes and butternut squash and green beans.
The others had a homemade chicken kiev, this, the potatoes and green beans.
I reckon without the chicken this cost about £1 to make.

Last week we needed to use some veg up (carrots, parsnip, onion, peppers and swede)-I put in an oven dish and poured over some olive oil and sprinkled brown sugar over the top...delish.

sounds like a type of ratatouille(sp?) delish blitzed on pasta, thinned as a soup, on a baked pot or with plain chicken. i also use this as a base for chilli for OH with HM potato wedges. yum! you can buy tins of ratatouille in asda, green tin with veg/beans0
