Needing inspiration - veg-based meals

    I recently made a pie consisting of mashed potato/onion/grated cheese and shortcrust pastry...didnt bother with weights,though i did use a 200gm bag of reduced fat grated cheddar.
    Layer a sandwich tin with mashed potato,then sauted onion,then grated cheese,repeat with mash,onion,cheese until you've used it all,top with shortcrust pastry and bake...i did mine in a remoska(think thats around 190C)for 35mins,very tasty and very filling...served with steamed kale.
    Slimming World..Wk1,..STS,..Wk2,..-2LB,..Wk3,..-3.5lb,..Wk4,..-2.5,..Wk5,..-1/2lb,Wk6,..STS,..Wk7,..-1lb.
    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)

    veg chilli tastes amazing on a baked potato too and a veg done in a basic tomato sauce is good with cous cous and its very low in calories too which is good for the waistline :j

  • Butternut bake (can also be made with pumpkin or sweet potatoes)
    Peel a butternut and cut into 1 inch cubes - boil, steam or microwave until just tender.
    Mix in one tin chopped tomatoes and one tin of red kidney beans - you need some chilli in this so I sometimes use the beans in the chilli sauce, or you can add some chilli powder in with the tomatoes or when I get pasta sauces with chilli really cheap I use these instead of the tinned tomatoes.
    Place in baking dish and sprinkle with grated cheese or breadcrumbs or a mixture of the two. Bake until golden and all bubbly.:D
