never cooked lamb!! recipes/suggestion please

hi, i have been given a piece of local lamb! have never cooked (or eaten for years) lamb so don't have a clue really! it is a shoulder with the bone in and i'd like to cook it tomorrow for lunch - am off shopping later

  • i do a version of a nigella recipe with it. put it in a big roasting pan sitting on an onion and a carrot and about an inch of water. Cover it with foil and put it in the oven for about 140 overnight. When you are ready to eat, shred it using a couple of forks so it looks like crispy fried duck. Squeeze a couple of lemons over it (I think the original recipe said pomegranate molasses if you'd prefer), sprinkle it with loads of salt flakes and chopped mint and the seeds from a pomegranate. We had this a couple of weeks ago with friends and, when they new what it was, one of them told me that she'd said to her husband on the way that she hoped I was doing my lamb stuff so I guess it's nice!! The best bit is eating the leftovers with houmous in wraps the next day!!

    If you just want a basic Roast Lamb recipe?
    Put lamb joint in large roasting pan, put in pre-heated oven (180c, 350f, don't know gas equivalent) and roast for 25 minutes per lb, plus an extra 25 mins. If you want tasty, make small cuts in the surface of the meat and tuck in slices of garlic, sprigs of rosemary. If you want extra crispy, rub surface of meat with oil before cooking. Spuds are also tasty roasted with chopped garlic and rosemary sprigs.
    I prefer lamb with redcurrant or cranberry jellies, rather than mint sauce but that's just me. I also use my own home made jam (damson or bramble) either to serve with the lamb, or to spread over before roasting to make a sweeter flavour.
    You may guess that I lurve lamb!:D
