    A spanish omelette is another veggie dish that works well as it can be prepared in advance and served cold - people just slice off the amount they want to. The cheapest place I've found for free range eggs is Lidl, as they are 85p for 6. This is the recipe I use for my spanish omelette:

    250g potatoes (peeled weight)
    150g Frozen peas
    1 onion (chopped)
    3tbsp olive oil
    8 medium eggs
    100g cheddar cheese (grated)

    1. Cut the potatoes into thick slices and cook in boiling, salted water for 5 minutes or until just tender. Drain the potatoes and set aside.
    2. Simmer the peas for 2 minutes, before draining and setting aside.
    3. Cook the onion in the oil in a large frying pan until soft.
    4. Add the potato and cook for 2-3 minutes, turning once.
    5. Lightly beat the eggs and season well.
    6. Add the peas, cheddar and eggs to the pan.
    7. Cook over a very low heat for 15-20 minutes until almost set (there should be some liquid egg on the top still).
    8. Put the pan under a grill until the top sets.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    A veggie chilli sounds like a great idea, could bulk out with lentils/quorn if its on offer!
    Some great ideas on here! A selection of dips such as home made houmous, tszatiki, butter bean dip, babaganoush served with chilli, bowl of nachos and perhaps some toasted and quarted pitta breads......am hungry thinking about it! Jamie Oliver eat your heart out!

    3 colleagues of mine are coming around to my place next Wednesday to decorate a cake for charity. A couple of them live half an hour or more away, so it wouldn't be sensible for them to go back home & then return. I've said that I'd make something to eat for them, however a "sit-down" meal I don't feel would be appropriate as we're not friends as such, so I'm looking for ideas for the following:

    4 people
    nibbly stuff
    mostly vegetarian, but low proportion can be meat based. not sure about fish at all
    easy & cheap to make

    so, far I have mini quiches, stilton pate, crunchy veg sticks & dips, fruit segments, choccies, maybe cake(could be fed up of it by then !)

    any more ideas please ?!

    How about vegetable spring rolls or samosas? Another thought is homemade nachos (tortilla chips covered with HM/bought salsa, sprinkled with strong cheddar then grilled should be cheap and tasty).

    The nachos sound like a great idea - people can help themselves to it and just leave a kitchen roll about for wiping hands on should they need it. Also, there's very little washing up involved.

    If you're doing nachos, how about a chilli to serve with them? Could do a veggie chilli with either Quorn mince or lentils.

    How about just a platter of sandwiches, Cheese, egg etc and perhaps some dips with crisps and veg sticks.

    Also I have in the past had cheese and onion rolls they look just like cocktail sausage rolls but are filled with cheese and onion instead, they were about £2.00 for a bag of 50 from the freezer section.

    I think this with a nice fruit platter grapes, strawberries etc would be fine.

    It all sounds a bit OTT for 4 people for a casual snack - why not just bung a veggie pizza in the oven
