ALso, someone posted a pepperoni and bean stew or something...with Hm breads I think....do you have recipes for them?

I think that was probably me. :)

The pepperoni and squash stew is based on this recipe but with pepperoni rather than chorizo as I've got a pack that needs using up. I also add a tin of white beans (usually cannelini or butter beans) to bulk it out.

The HM flatbread is something I can't comment on yet as it's an experiment to try and recreate something I used to buy from a shop that no longer exists. :( It will be white bread dough topped with tomato puree, grated cheddar cheese, rings of onion and some dried herbs, but I don't yet know how well it will turn out.

I'd also like to second the request for a recipe for the pot roast, please, hotcookie - that sounds lovely. :)
Back after a very long break!

Here's my plan for the week - things may change a little as we may be going out for dinner for my Dad's birthday at some point this week, but not sure of which day yet.

14th: Fishfingers, baked beans & croquette potatoes
15th: Burgers (veggie for me, beef for DH), couscous & courgette
    16th: Spinach & ricotta tagliatelle
17th: HM Veggie sausage pie & baked beans
18th: Tuna (me) / ham (DH), boiled potatoes, leafy salad, fruit & nut salad, coronation rice salad
    19th: Pizza & leftover salad
20th: Kiev (veggie for me, chicken for DH), peas & mashed potato
Enjoy the little things, for one day you may look back and realize they were the big things.

Friday - pasta al lago (it's my version of what used to be offered in the canteen of a previous workplace (called 'the Lakeside restaurant', hence the name) as 'pasta carbonara' - it's bacon and onion cooked together until golden, then mixed with cooked pasta, peas, grated cheddar cheese and beaten egg over heat until the egg scrambles. I apologise to any Italians currently sobbing with horror at that being referred to as 'carbonara', but I promise it's really good!)

Maitane - one of my favourite pasta dishes is courgette, bacon and soft cheese - grated courgette cooked with chopped smoked bacon, garlic and a pinch of herbs until soft, then mixed with soft cheese. I usually do it as a pasta bake, topped with sliced tomato, but it makes a nice sauce, too, if thinned down with some of the pasta water. As long as the bacon's lean and you use low fat soft cheese it's pretty healthy, something that's important to me at the moment, too. ;)

CCP, thanks so much for replying to me. Those and the frying pan lasagne sound brilliant and can be made friendly to my waist. I need to find the OS recipe post and get some good ideas - I'm training for the fitness test that I have to pass to get onto the paramedic course in September 2012. I've only got 10 stone to lose, :rotfl:, and of course, I need to go from an average wage back to being a skint student.

Still, this time, I have the MSE forum for good (and kind) advice :D
