Left over veg

Sorry this is a probably a very stupid question!:o
When we have veg (peas & carrots) left over from Sunday dinner I often keep them in the fridge overnight to bung in with left over meat & gravy next day to make a casserole.
Can you freeze left over veg?
I was thinking that if it did freeze then I could just pull some out of the freezer to add when needed - today I'm doing sausages in some left over onion & mushroom gravy that I had frozen and some veg would have padded it out and added a bit of flavour.
My "will it freeze?" book just tells me how to freeze uncooked vegetables.
I can't think why I couldn't do this but I wanted to make sure:D

i've tried freezing pasta a couple of times and it never tastes as good, it goes a bit 'bitty'... can you refridgerate it? or put tomato sauce in it and a few veg so it tastes like a different meal...0
