left over cava

I appear to have quite a lot of opened, left over cava, which for one reason and another I don't feel like drinking... Anyone got any ideas how I could use it up? I thought of jelly, but there's a limit to how many jellies I can make and eat and it seems a shame to waste it! :)

    I remember a friend made a chicken casserole with sparkling white wine...it really did give it a different flavour, or use it to make a risotto

  • If you've got left over cream, and aren't on the wagon, James Martin has a syllabub recipe that uses up Cava

    If not, I'd definately second the chicken casserole, risotto or chicken in a foil parcel with the cava added in and maybe some mushrooms.

    Hi,
    you can make a dessert called zabaglione. Just whip egg yolks with sugar, (roughly 1 tablespoon sugar for each yolk, I add also 1 egg white in total for more texture), add the contents of half eggshell wine for each yolk (if it's slightly more or less it doesn't matter) and cook slowly in a double boiler (or in a pan over a bigger one filled with hot water), until it is of a creamy consistency.

    Tightly sealed it will keep for 24 hours in the fridge. Any longer and it will lose too much fizz.

    If you freeze it the bubbles will come out so try and get it flat before freezing.
