Help-desserts for party

I've got today to make some desserts for a big family party on Sunday. The problem is we have to take them for several hours in the car tomorrow so I can't freeze anything until then. I've got a pavlova in the oven so that's one done, with the egg yolks was going to make some creme pattisserie for profiteroles. I can make this today and keep in fridge then cool box on the journey but can I then freeze it until Sunday. The same with the peofiterole shells, can I make today and put in airtight container and freeze tomorrow?
