Ok, in my quest to be less wasteful I am hoping to save this grated potato. Ive overmade as usual for rosti

Why don't you make up the rosti patties first and then freeze them?
I haven't bogged off yet, and I ain't no babe

Hi Lynzpower,
try either making them up as bogof says or maybe freeze them uncooked in some water-then defrost, pat dry and reuse.Don't know if it will work, but you leave them in water to stop them going brown normally. good luck,
