I have a big bag of black eyed beans and would love some fairly easy veggie suggestions of what I can do with them!

Make a bean casserole. Or a chilli.

Tomatoes
Onions
Peppers
Garlic
Chilli
Cinnamon
Bay leaf
All spice
Herbs
Cook onions. Add remaining veggies. Simmer slowly. Add spices and herbs. Serve.TL0 -

2 ideas - stick them in a HM soup to add bulk, I've just made a "leftovers" soup with a tin of tomatoes, a tin of black-eyed beans, carrots, chestnuts and onions and some stock from our New Year's roast goose (omit for veggie option, obviously). Also, cook them, mash them up with minced onion and grated cheddar, make into patties, egg/flour/breadcrumb them and shallow fry for black-eyed beanburgers. Hi,
my mum used to make vegetable soup with spinach and black eyed beans. Just cook together the vegetables you use for stock (carrot, celery onion) with spinach and soaked beans. It was one of the best soup she made.

how about the Greek way of doing them? Cook them as per instructions them chuck a load of spinach in, hardly needs cooking...just till wilted, drain and then stir in olive oil serve with a tin of tuna and fresh bread it lovely...0
