DD2 and DH are veggie. I make Delia's Onion Gravy for them. It is very tasty.
8oz onion (finely sliced)
2 tsp corn oil
1 tsp golden caster sugar
15 floz Swiss Marigold stock (you can buy this in both Veggie and Vegan varieties)
1 tsp mustard powder
1 dessert spoon Worcester Sauce
1 dessert spoon plain flour
Salt & Pepper
Put the onions in a bowl with sugar and one tsp of oil to coat then place on a baking tray and put in 200C oven for 15 mins. Onion should be golden and charred at the edges. Then put onion in pan with flour and stir.
Add mustard and Worcester Sauce to stock.
Slowly add stock to onion/flour mixture. Bring to the boil stirring all the time. Simmer for five minutes and season to taste.

I'm veggie, and I use:
- water left over from boiling the vegetables,
- some cornflour,
- a teaspoon of marmite,
- a good squirt of tomato ketchup,
- and a tiny bit of mustard.
