Break over New Year's - Suggestions Please

Hello
Me and my other half (aged late 20's and early 30's) have decided we want to go away (in the UK) over New Year's Eve. We always end up not arranging anything and then on the day, wishing we had! And as it's also our 3rd anniversary on the 2nd January, we thought we'd kill two birds with one stone so to speak and book a short break away.
We live in North Herts and would like to go away on the 30th or 31st December, and come back on 3rd January.
We love the idea of an inn or pub with a restaurant, so we can have some good food in the evenings then have a drink in the pub after. We're not really into posh hotels, more into country pub with rooms/boutique style smaller hotels.
Have never gone away over New Years before and already a few places we have contacted are fully booked! Can anyone suggest anywhere that fits the bill? We havent got a budget as such, but the more money saving the better
