Any recipes/ideas for a child with multiple allergies.

My little niece has just turned 3 and has multiple allergies. Her mum is struggling to find interesting food for her and has to miss out on a lot of the normal food and treats that are taken for granted.
She can't eat in any form :-
Any Dairy (plus eggs)
Wheat
Nuts
Fish.
She does have soy milk and rice flour and can have sugar as long as it also doesn't also contain any of the above. I was wondering if anyone had any bright ideas that might make her food life a little more exciting.

My DD is allergic to nuts and eggs which makes life pretty difficult, so having those allergies plus dairy, wheat and fish must be hell. You have my sympathies.
I can't think of much I'm afraid as dairy and wheat allergies in particular rule out so much.
Are oats OK? If so oatmeal (not porridge oats) might be a good substitute for breadcrumbs for making chicken nuggets. You'll need to get them to stick. The usual recommendation is egg, no good:rolleyes: I use yogurt or buttermilk, but no good for your niece, however I've found that if you dip the chicken in water then in the oatmeal it will stick. Shallow fry or spray with oil and bake. Or what about crushed cornflakes ? Not sure what's in them apart from corn.
Rice seems like a good idea with meat sauces, chili and the like.
Baked spuds, potato wedges, home popped popcorn is an excellent snack for kids.
My Dd has a classmate who is allergic to milk and he eats a spread called Pure which his dad uses in cakes. I'm not sure how to get round the flour problem though, although Ryvitas may be OK as they are rye, oatcakes and rice cakes should be OK too.
I'll have another think and see if I can come up with some other ideas.0 -
I wonder about spelt flour?
It is related to wheat but is easier to digest, and is great for breads. Look at www.pacificbakery.com/spelt.htm for more details.
Quinoa is a grain that is classed as a superfood - a bit like millet and can be used in place of cous cous, might be worth a try.0 -
That's reminded me of barley
Barley is cheap and healthy and can be served like rice or in soups and stews.
You can get beremeal from some healthfood stores which is barley flour.0 -

It's not recipes but they sell great allergy awareness products. My dd has the stickers on her lunch box and always wears them to parties. She even put them on her bedroom door so that Father Christmas would know not to give her the wrong chocolates
Kinnerton chocolate do a plain choc bar that is nut-free, egg-free, gluten -free and soya-free (I think) Waitrose stock it.

Ooh, yes I've found some great cake recipes on vegan sites that my dd can have. Not sure about flour though
