i have just cooked a huge gammon joint (in coca cola ala nigella) to have received a phone call from the friends who were coming to eat it tonight, they are cancelling due to illness!!
although we will eat some of it i was wondering if it will freeze ok and if not what can we do with the leftovers, other than the obvious sandwiches

I often cook meat and freeze so its fine to do. Get it frozen ASAP though and l always use the freezing in option.0

It will freeze well - I would suggest packing it in useful amounts rather than the whole joint, not necessarily sliced but unless you have an electric carver it can save problems later.
Ham can be substituted for corned beef in a hash.
It adds great flavour instead of bacon in a bolognaise sauce.
My mother used to wrap slices of ham around cooked heads of chicory, place them in a greased dish, cover them in cheese sauce then some grated cheese, and finish it in the oven or under the grill. I do something similar but with leeks, as I find chicory a bit too bitter for my taste.
Make a thinnish white sauce with loads of parsley in it and reheat thick slices of ham in it.
Thick slices of ham can also be reheated in gravy, possibly sweetened with the juice from a tin of pineapple rings (which can be used as a garnish, either as they come or placed on top of the ham in a fireproof dish and grilled).0
