Cooking chicken

Hi,

I've decided to save my pennies so instead of going out tonight we have 8 people coming over for dinner. (everyone is sharing the cost)

However trying to find the best way to cook plain chicken breasts without them going dry and horrible (my friend is bringing the sauce all I have to do is cook the chicken)

I have the tiniest grill in all the world, I know it might be a really silly question but what would be the easiest and quickest way?

  • Since having stomach surgery I've been unable to eat roast/grilled chicken. I find it easier to poach them. Bung the chicken breasts in water (with veg if want to add some flavour), bring to the boil and then turn heat off. While water is cooling the chicken is gently poached and comes out lovely and moist.
    I usualy use what's left (espec if veg added while cooking) to make a quick soup.

    Put some pancetta (bacon) around the chicken breast and bake them in the over for about 20 minutes. They go well with loads of stuff and they aren't dry.

    i poach my chicken too but i also add a chicken cube along with some veg and its lovely and moist

    make them into little foil parcels, add a knob of butter and a sprinkling of tarragon (optional) and bake them in the oven.........lovely and moist but not quite as healthy as poaching
    - prior planning prevents poor performance!

    If you want the grilled finish could poach then pop under the grill to brown.
    One day I might be more organised...........:confused:
