Bread makers and gluten-free bread

Can anyone let me know why some gf flour says not suitable for breadmakers?
I'm giving one a go on loan from a friend as the gf bread from the supermarket is just a rip off and like cardboard!

    i have tired to make GF bread in the bread maker and it was terrible!

    it didnt mix right and was this unbaked lump of concrete!

    ive been handbaking it instead (had borrowed my mums one) along with normal bread but i havent perfected the recipe yet.

    gf flour can be veryu difficult to use and consistencies vary coz its a flour blend as opposed to one particular kind of flour so qualitites vary and you need to adjust the liquid to compensate. well thats what i have found anyway.

    Gluten free flour has no gluten in it - hence not being any good in breadmakers as the very nature of breadmakers means they knead the bread to release the gluten.
    If you haven't got it - please don't flaunt it. TIA.

    oh and you need to be able to feel the consistency of the dough to adjust the xanthum gum which mimics the effect of the gluten.

    I wonder why though?? I've made it in the oven before but think the breadmaker is supposed to be much cheaper on electricity.
    I do have some prescription bread mix that has instructions on the back for a breadmaker so I'll see how that works but I was wanting to just try normal GF flour but I'm confused!

    Thanks guys I was typing as the last 2 posts came in. We will see how the glutafin bread mix works then...might have to go back to getting that on prescription if the flours don't work :(

    I am so pleased I came across this thread. I tried several times at the weekend to make g/f bread, both in the bread maker and in the oven and it was awful!! Has anyone tried making rice bread?

    I am so pleased I came across this thread. I tried several times at the weekend to make g/f bread, both in the bread maker and in the oven and it was awful!! Has anyone tried making rice bread?

    i havent tried rice bread i need to find the time to get back and perfect my recipe using doves flour mix.

    the no-kneed bread recipe off here was my starting point and it works pretty darn well for a normal bread and so so fast too!

    My hubby used a breadmaker for mine using the Glutafin bread mixes, never had any problems, even my kids loved it.

    I did a glutafin breadmix last night and it seems reasonable. I'm trying another box on a shorter cycle now. iIve found Doves Farm do gf flour that you can use so I'm going to try that too.

    It isn't possible to substitute gluten-free flour for wheat flour weight for weight and use the same program and recipe, as they need treating very differently. Some breadmakers (e.g. the Panasonic series) have special gluten-free programmes, but still require you to use a special mix, presumably because the complex mix of ingredients isn't very forgiving if you're slightly off on quantities.
