bread roll help please

hi there,
can anyone help - I made some whole meal bread rolls the other day, did them in the BM & then baked in the oven but they are really dense & heavy - has anyone got any tips on how to make them lighter or is this not possible to achieve with hm/bm rolls??

Which BM do you have? I have the morphy richard fast bake and use the recipe thats in the manual......I'll go find it if you want.....0

I've got a panny so it mixes up the dough etc & then you shpae, proove & bake, not sure if it's because I used 100% whole meal flour insead of 50/50 ?0

Leaving them to prove before they go in the oven always takes longer than you would think. Wait until they're really really light and fluffy.
You could do a wholemeal blend with some white flour. This would make them lighter. I use a touch more yeast when I'm making rolls.[SIZE=-1]"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"[/SIZE]

Whole meal does tend to be heavier and takes a while longer to prove. Are you putting the rolls in a warm enough place and waiting for them to double in size?MFW 2019 #61: £13,936.60/£20,0000

thanks for your replies - I suspect I didn't let them prove long enough, I will try 50/50 next time too as I think its just too dense with the whole meal (didn't have enough white flour the other day)0
