I had ordered a lot of items from Amazon for my business over the past few months, and me (being as stupid as I am) am choosing a few days before the deadline for my VAT returns to be ready to prepare all the invoices.. I have to print them all out, but I noticed their VAT number was not included on any of the invoices, dispite charging VAT, isn't it law to include the VAT number?

Just claim the output Vat anyway. It won't matter unless the Vat man checks those invoices and notices there is no number. Even then, provided your purchases are obviously genuinely business related, he will probably accept them. He will surely have heard of Amazon and know that they are Vat registered.
