What to do with beef mince which is sort of Thai?

I have most of the thai flavours (fish sauce, chilli, corriander, lemongrass, ginger and garlic)

however, I have no coconut milk and dont want to buy any (too high in calories and am being v strict on shopping budget, shopping was done at the weekend so no more until next weekend)

but i have beef mince to use

we've got rice and noodles etc

got some nuts

what can i do with the mince that is sort of thai but without the coconut? ive only ever cooked thai stuff with coconut milk/fish/prawns, never with mince
