I have potatoes, courgettes and pancetta - what can I make for tea?

As title suggests I have Potatoes (2kg) 4 large courgettes and a pack of pancetta which all need using up.
Can anyone gine me some ideas - I am lacking inspiration!!
ps I have a fairly well stocked store cupboard and I'm popping to aldi later so can pick up extras if need be!

I would add some beaten eggs and cheese, and have a frittata.

Good answer - perhaps I should have mentioned hubby does not eat eggs (unless cooked in something like a cake!!)0

Possibly something like this: http://www.deliaonline.com/recipes/cuisine/european/english/courgette-and-potato-cakes-with-mint-and-feta-cheese.html adding the fried pancetta in place of the mint
Serve them with some sweetcorn or perhaps even chicken drumsticks.

On Saturday, we had spaghetti and a sauce made from Philadelphia with bacon, mushrooms and courgettes. It wouldn't help with the potatoes though. Another option would be to wrap the pancetta around chicken or something and have potatoes and courgettes with it.0

I would chop the courgettes & potatoes into chunks, cut the pancetta into strips and stick it all in a dish with a tin of tomatoes and some garlic and basil to cook in the oven. Sort of like a rustic Italian ratatouille served with crusty bread to mop up the juices. :drool:Dum Spiro Spero0

how about a sort of hash with pancetta & potato (do you have some onion?) then girdled slices of courgette with it?
or if you have some pasta a sauce with the pancetta & courgette (could even make gnocchi with the potato) this would be nice with a creamy or yogurt sauce0 -
Fab Idea BoredJellyBean - I am going to make gnocchi with roasted vegetable and pancetta ratautollie style sauce. First time making gnocchi so I will let you no how I get on!

when in doubt get the frying pan out! and a little garlic and olive oil (possibly some butter too). then fry it all adding ingredients from the longest to cook to the shortest. then either do some pasta and mix it all in or cous cous (cooked). add seasoning and it will be delish.0
