Help Please!

I made an apple pie today which turned out great (for a change) but when I tasted it, the apples have no flavour to them. They were ones I had picked and frozen during the summer, not cookers though. They were sweet and lovely but the yummy taste has gone. Any ideas how to rescue the remainder of the pie? :confused:

    i`d do what toxic lemon suggested maybe with a squirt of lemon juice as well. did you add any lemon juice when stewing the apples? i find that my apple pies are always quite bland without it and now i always add it for flavour and they come out delish! have a fab xmas everyone ...angchris xx

    How about adding some sultanas, mixed spice/cloves/cinnamon, sugar if not already added.

    Thanks for your replies! I added lemon juice and sugar to the apples and cinnamon to the pastry. I am thinking of mushing it up, adding some brandy and using this as a base for a trifle (without the jelly part). Do you think this would work?

  • The usual solution is just to serve it with masses of cream.
    If you think reality makes sense, you're just not paying attention!

    Maybe it's too late, but soggy pastry in a trifle sounds a bit unappealing. As you have brandy, why not just lift the pastry lid and sprinkle it on the apples, maybe with a bit extra sugar and cinnamon?

    I do my stewed apples with brown sugar and cinamon - I do tend to use bramleys though rather than dessert apples.

  • In my experience there is a huge difference between cooking apples and eating apples in a recipe. I only use eating apples if I am adding them to a curry etc and if I am pushed use them for apple sauce. For pies, crumbles etc I always use cookers. But that is my taste others may well disagree.

    The suggestions above are good. If you still have some frozen apples add some cloves or sultanas to the mix before you add it to a pie etc.

    thank you all very much for your thoughts. I think I will steer clear of trying to use up the rest of these apples in pies! I will add butter and vanilla, heat together gently then puree. A firm favourite since the children were little and it keeps well in the fridge.
