Christmas Veg help

We have our Christmas meal on the 24th and so I've got the veg in - sprouts, carrots, parsnips. I know what to do with the sprouts and I know how to cook carrots but my question is how exactly do I roast the parsnips (and at what Gas mark?) and is there anything different I could do with the carrots instead of just plain old boiling them?

Would be grateful for any advice.

    I like to roast carrots, lovely and sweet and for the parsnips a drizzle of honey over them before popping them in the oven is yummy and I sometimes add a little whole grain mustard too

    I treat parsnips like roast potatoes, chop them into chunks and parboil for 5 mins them spray with Frylite and bung 'em in the pre heated oven on high (Gas mark 7)

    Carrots are nice mashed with swede or turnip, I buy the little Chantenay carrots for Christmas because I don't have time to do exciting things with veg at Christmas.

    We just roast the parsnips around the turkey with the potatoes, sometimes with sausages mixed in as well.
    Life's probably too short to worry about vichy carrots with so much other good food around - sometimes the best meals are the simple ones.

    Yep, that's exactly how I do my parnsips. You could also add a little maple syrup onto them before roasting.

    Also love my carrots mashed with swede. It's the BEST way. Mmmmm! :)

    OOoh yes, steam or boil your carrot and swede (equal parts) until really tender and then mash with butter, salt and pepper :drool: Don't forget to save the water for your gravy too.

    I usually mash the carrots and swede together with a little bit of butter and cream and season with salt, pepper and a pinch of nutmeg. This can be made earlier on and heated in the microwave when it's time to serve it.

    Carrots battoned & steamed, with a knob of butter & a pince of dried mixed herbs on after cooking are really nice.

    I boil my carrots with a little sugar and butter. To give them a sweeter taste.
