Breakfasts:

Winter - have a container full of chopped, dried fruit ready to add to porridge in the mornings and some soft, dried apricots to have after toast.

Summer - have a container full of chopped strawberries, raspberries, blueberries and chopped grapes ready to add to bowls of weetabix or with fresh yogurt and honey after toast.

Poached/scrambled/boiled egg and toast or beans on toast are a filling start to the day.

Dinners

Mine like 'salad to pick' with lots of their dinners, which is basically just cherry tomatoes and sliced cucumber and peppers. We also have mixed frozen veg in the freezer and a help-yourself-to-fruit-unless-it's-in-the-fridge policy!

Week 1:

Monday - Veg and flageolet bean pie with crusty bread
Tuesday - Squash soup and bread; apple crumble and custard
Wednesday - Pasta with tomato sauce and roast veg
Thursday - Take-your-pick leftover day
Friday - Veggie sausages, chips and beans (because you deserve a rest.)

Saturday - Make-your-own-pizza day
Sunday - Nut roast dinner

Week 2:

Monday - Vegetable pasta bake with garlic bread
Tuesday - Mushroom omelette, beans, bread and butter
Wednesday - Spaghetti bolognaise with veggie mince and veg
Thursday - Broccoli quiche with roast, diced potatoes
Friday - Veggie burgers in buns, potato wedges (because you deserve...)

Saturday - Make your own pizza day
Sunday - Quorn fillet for veggie - everyone else is having chicken!

More to come with recipes.

Thanks for this. Although we eat meat, we try to have at least 3 meat-free days a week so this is great!
