    shortbread,fairy cakes

    shortbread

    125g/4oz butter
    55g/2oz caster sugar
    180g/6oz plain flour
    Preparation method
Heat the oven to 190C/375F/Gas 5.
Beat the butter and the sugar together until smooth.
Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
Cut into rounds or fingers and place onto a baking tray. Sprinkle with icing sugar and chill in the fridge for 20 minutes.
Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack

his recipe can be summed up as "the 4/4/4/2 recipe" which once you know you will never have to look up again.

    100g/4 oz butter (softened)
    100g/4 oz SR flour
    100g/4 oz caster sugar
    2 eggs
Put the oven on first - on medium (Gas 4/180 C/170C fan).

Whisk all the ingredients until creamy and spoon into a bun tin or bun cases. It makes 12.

Cook for about 10 - 15 minutes until cooked. To check they are cooked just press gently and they should spring back.

Once cooled, the cakes can be decorated with icing.
