chipped potatoes

having a clear up the leftovers week before christmas sets in. stressedoutmumofone has made me really fancy egg and chips - yum yum.

I think somewhere on here i read about dicing up potatoes and frying in frying pan then when they are ready you push them to the side and fry the egg in the space. I can't find the thread i think I saw it on!!!

Can anyone help me - do I Have to parboil the potaotes - how long will they take to cook and have I got the general gist right ??? :confused:

    I chopped them up small and fried them off - however they were still hard in the middle so I microwaves them for about 2 mins and finished them off while i fried the egg.

    Yum - such a great dish warm, filling and cheap. :D

  • Sounds great. I live in Edinburgh too, wish you had invited me round to sample!
  • You can either par-boil them and then pat dry and fry. Or you can cook them in the fat/oil on a medium heat (to cook the insides rather than brown) then turn up the heat for the last few minutes to brown and make them crispy.
