Road Trip!

Ok so being old style I and a few friends are doing a road trip. 1 is coming from Grermany!

Anyway everyone is staying at mine (4 plus me) and I'm providing the food for the night and also stuff that is easy we can take away with us to have over the course we're gone.

I want to do this as cheaply as possible but provide a good amount of food so I need loads of ideas especially sandwich fillings that won't end up soggy after a day!

So far I've thought of:

Chicken wings
Scotch eggs
Sausage rolls
cocktail sausages (Am I able to buy the frozen bags, cook them up and eat them cold like the prepacked ones or do I have to go for the prepacked?)
Quiche
Salad
Dips (Does anyone have any dip recipes that taste shop bought? Homemade never tastes the same to me but I really want to try again)
Maybe a chicken and sweetcorn pasta salad.
Cheese
Crackers
Cold meat
Pickles, beetroot etc



Cakes and cookies.
Cheesecake for a pud? (Anyone have any comments on this wouldn't be taking this away just to eat on the Thursday)

What would be the best cakes to make that will be ok to transport?

I can't think of any other questions right now but if I do I'll come back ;)

  • Sounds like fun! Pasta is always my go to choice for when cooking for a crowd because it is usually less expensive than the other foods. You can do something like rigatoni (noodles and tomato sauce) or do a pasta salad with spiral noodles and add some veggies and italian dressing (i usually also add cheese and sometimes diced up pepperoni or meats with it).

    Fruit or ginger cakes would keep well and are fairly solid so would be easy to transport.Cheesecake might be more difficult to carry and would need to be kept cold.

    We've just come back from a walking holiday in Majorca and we took things like packets of mixed fruit and nuts, cereal bars etc. You can get multi-packs of individually wrapped packets of savoury crackers from Morrisons which are good for travelling as you don't have to worry about keeping them fresh.

    Jars of salsa and tortilla chips wouldn't need to be kept chilled.

  • I will have a fridge available cat_smith (we're camping in someones back garden!) so I'd be fine to store stuff. Just the 4 hour journey it would need to be ok for.

    The cheesecake will just be for those staying at my house the Thursday night so no worries on that front.

    We'll have plenty of drinks (It's costing in the region of £30 for the trains/buses etc and camping in the back garden. Holiday on the cheap :D)

    Thanks all some great suggestions. Any ideas on sandwich fillings that won't make the bread soggy that's a bit more exciting than ham and cheese?

    Sandwich fillings:

    Chicken with redcurrant jelly
    Chicken with pesto
    Sausage and mustard
    S/Salmon (trimmings) and cream cheese

    Also, I often do frittata for packed lunches. (Omelette with sliced potatoes and lots of veg that you have on hand - great for using up extra cooked potatoes).

    Couscous is quick and easy to turn into salads, hot or cold. Make up with powdered stock and add veg/meat whatever.

    Boiled eggs? Come in their own packaging and can easily be sliced up when you're ready to make your sarnie. You could also take flasks of soup
