    Sure - always happy to share recipes :

    Bacon Melt potato wedges (enough for 4 - can be doubled/halved easily)
    750g frozen potato wedges
    4 tbsp mayonnaise
    1 small onion chopped small
    100g grated cheese
    1 pack back bacon chopped and cooked

    1. Heat oven to 220C.
    2. Tip the potato wedges onto a large baking sheet, ensuring they sit in a single layer. Bake for 10 minutes.
    3. Meanwhile, mix together the mayonnaise, onion, cheese and bacon.
    2. Tip the potato wedges into an ovenproof dish and spoon the mixture over the top. Pop back into the oven for a further 12 minutes, until bubbling.

    Creamy Mushroom Spagetti (serves 4 - easily halved or doubled)

    400g spagetti
    6 rashers bacon, cut into strips
    250g mushrooms sliced (my favourite is chestnut mushrooms)
    200g baby spinach
    100g gorgonzola or creamy blue cheese, crumbled

    1. Cook spagetti as per packet instructions
    2. Meanwhile, fry the bacon in a large frying pan, for 5 minutes until starting to go crisp. Tip in the mushrooms and fry for 3 minutes until cooked.
    Drain the pasta and tip into the frying pan along with the spinach and cheese.
    Toss everything together over a low heat until the spinach as wilted and the cheese melted.

    If you really hate gorgonzola/blue cheese you can use creme fraiche or plain yogurt (2 or 3 tbsp)

    CHICKEN & CRANBERRY RING from The Pampered Chef recipes

    2 pre cooked chicken breasts (or the equivalent in Quorn pieces)
    1 medium head of broccoli
    85g/3 oz dried cranberries
    1 garlic clove
    115g/4oz Swiss gruyere cheese (or mature cheddar)
    200g small jar mayonnaise
    1 tsp fresh dill if possible (or dried)
    1 egg (beaten)
    small packet of flaked almonds
    2 tins of Sara Lee plain croissant dough (6 croissants per tin) or 2 tins of Sara Lee chocolate croissants (discard the chocolate)! (Please don’t buy the 4 'all butter' croissants in a tin as they are not really suitable for this recipe).

    Preheat the oven to 180ºC

    Chop the chicken into small pieces, and chop the broccoli and garlic quite fine
    Grate the cheese
    Mix the chicken, broccoli, cranberries, garlic and cheese and chopped dill with the mayonnaise

    Take the croissant dough out and discard the chocolate. Unravel the dough and tear every SECOND perforation (so you have double squares).
    Now take a pizza cutter and cut diagonally across the 2 squares so you have 2 long thin triangles. Do this for all the double squares in both tins.
    Take your PC round stone (or a pizza baking tray) and lay the triangles on the stone, base in and pointy side out, touching or overlapping depending on the size of your stone. Leave a hole in the centre (it is a ring).
    Put the filling onto the dough that is on the stone, and take each pointy end of the dough and fold it over into the centre.

    Now glaze with the beaten egg and sprinkle on the flaked almonds.

    Bake at 180ºC for 20 minutes or until the pastry has turned golden
    Save the earth, it's the only planet with chocolate! :)

    Monday - steak pie with mash and veg
    Tuesday - OH at party I'll have pad thai
    Wednesday - gammon, egg, chips and pineapple
    Thursday - chicken fried rice
    Friday - veal and chips with salad
    Saturday - plaice (poached in white white and cream on a bed of spinach and smoked salmon :) ) with sauteed potatoes and honey roasted veg
    Sunday - fresh pasta with duck and mushrooms in a HM plum sauce

    My family are here saturday and sunday so I have to make an effort

    Menu for this week is/has been:
    Sat company Chrimbo meal!
    Sun- pasta with pesto and HM garlic bread
    Mon- mixed veg supper with cheesy breaded topping [recipe in index]
    Tues- mince mixed with brown sauce, baked beans, onions and a dash of Worcs sauce [I can't remember exactly what's in it but it's a lot nicer than I've made it sound!]
    Wed- kedgeree
    Thurs- HM beefburgers
    Fri- hm pizza
    Aril
    Aiming for a life of elegant frugality wearing a new-to-me silk shirt rather than one of hair!

    I'm glad this thread is back :)

    I've got a sickness bug so am eating if and when I feel like it but the official meal plan is

    Mon :- Shepherds pie
    Tues :- Goulash
    Weds :- hot and sour pork
    thurs :- spaghetti with prawns, chilli and garlic
    fri:- steak and chips
    sat:- our own christmas lunch (just the 4 of us done my way!)

    sun: our special christmas eve meal - oh and I don't really buy each other pressies for christmas but we put the kids to bed early and splash out on a really special meal on christmas eve, so it is.....

    Champagne and olives and nuts to start
    Mojito's (cocktails!) and nacho's with hm salsa and guacamole to start
    A mexican pork dish with beans to follow
    lemon cheesecake

    :xmassign: Mon: bacon butties for breakfast and then hotfooting it down the motorway to stay with parent for a few days and eating their food!

    Sorry - I looked at it after posting and thought that was a silly choice of words... then I though "gee, who will notice?" :rotfl:

    Please replace the word "discard" with "eat" wherever appropriate! It is yummy chocolate too... (I don't discard either!)

    They are great tasing meals (I think) and easy to make and to adjust to personal taste
    If anyone tries them please let me know what you think

    Tonight - Toad in the hole and gravy
    Tomorrow - Cheese Toasties
    Wednesday - Mushroom and Spinach Pasta
    Thursday - Christmas Dinner - we are going away, so having it early and people busy before Sunday. Having roast beef, Yorkshires, spuds, sage and onion stuffing (separate), brocolli and peas, gravy. HM Christmas pud and cake and mince pies not HM. Choice of drink probably bubbly and liquers after or liquer coffee with whipped cream topping. Mints.
    Friday - Tapas - husband is eating out for lunch, so light snacks in the evening
    Saturday - Pizza with mushrooms for me and pepperoni for hubby.
    Sunday - Eating at the airport, so whatever we fancy there. You can't take food into the departure lounge and flying EasyJet, so will treat ourselves to whatever they have.
    Monday - Eating out for Christmas, having roast beef, the others are having turkey. Trifle or Christmas pud, coffee and pies.
    Tuesday - eating with my mother, pizza and salad then packed lunch for journey to airport before we get there. We stopped by the beach in Rustington to eat our sarnies last time.
