Mortgage Application and change of employer

Hoping someone can advise me.
We're first time buyers looking to buy somewhere pretty soon - our timescale is dictated by the sale of another property (not ours) which will be funding the deposit, which makes things a little uncertain.
The mortgage will be in joint names, but I'm the main earner. I've been with my current employer for 3 years, however I have a new (better paid!) job due to start in the middle of August. I'm not sure what impact this will have for the purposes of applying for a mortgage?
Can anyone advise? I'm not sure whether we should be trying to arrange and reserve a mortgage before hand, whether changing jobs even with no gap in employment will cause a major problem, etc etc.

If you are on a probation period it may affect it - but if its in the same sector that would go for you.
Can't comment on scottish hse buying or legal process as I am based in England.

It's in the same sector - I'm moving into a graduate job having just finished my degree. I think they almost always have a probationary period as standard, although from what I've heard in that type of job they almost never enact it.0
