Truffle recipe

I was going to try to make some truffles today - but I can't find a recipe anywhere and I have to go shopping in 20 mins! Can anybody help?

    Aaahhh have to go, going to but a madeira cake and some chocolate and hope I have the rest in my cupboard. I've searched on here for a recipe but can't find any.

    Yes the delia ones are really nice and look so pretty too. I used Bournville chocolate when I made mine, I didn't like the high cocoa chocolate - too bitter for me!

    Here's a kind of truffle recipe which I've made a few times, and loads of people really like them :)
    Brésiliennes
    A rum and coffee-flavored chocolate/almond ball.
    INGREDIENTS:
    • 1 cup blanched almonds
    • 1-1/4 cup sifted confectioner's sugar
    • 1 teaspoon instant coffee
    • 2 Tablespoons dark rum (like Goslings)
    • 2 Tablespoons whole milk
    • 3-1/2 oz. unsweetened chocolate, grated (Valrhona or Callebaut is preferred)
    PREPARATION:
    1. Put 1/4 cup of the almonds and 3 tablespoons of the sugar into the bowl of a food processor. Pulse until the almonds are finely ground, but not pasty. Transfer to a mixing bowl.

    2. Repeat step 1 until all the almonds are ground.

    3. Add the remaining sugar to the mixing bowl and stir to combine.

    4. Dissolve the coffee into the rum and add it, along with the milk and grated chocolate to the almond/sugar mixture. Stir to combine and allow to stand 15 minutes.

    5. Shape into 3/4" balls and let stand on waxed or parchment paper 2 hours to dry.

    TO STORE:
    Store in an airtight container in a cool place. Makes about 2-1/2 dozen.
