    there is a lovely nigella lawson cake called coconut slab which uses creamed coconut - I make a lime icing to go with it - not at home to find the recipe but worth a google

    One of my favourite things to cook is a coconut rice pudding. Throw in the pudding rice, coconut milk, a tin of evaporated milk and cook in the oven. When it is almost done add sugar to taste. Now admittedly it is not low calorie !! but it is pretty lush!! enjoy :)
