sweetcorn- what to do.

Hi Guys

I've already defrosted 2 chicken breast for our tea (was going to have teriyaki chicken kebabs), but I can change my mind!

I have a whole tin (minus a spoonful from todays tuna and mayo sandwich) of sweetcorn in the fridge. From my experience it goes off really quickly so I'l like to incorporate it into tonights meal. Other than just bunging it on the side of the plate, does anyone have any ideas of what to do with my chicken and my sweetcorn (I havent got any jacket potatoes or else i would have done chicken and sweetcorn mayo in a jacket potato, mmmm).

    Personally Id make sweetcorn fritters out of the sweetcorn, grind of pepper and a thick batter made with SR flour. rtake a spoonful & lighlty fry in a bit of oil on both sides.

    these can be served as a veggie side on anthing, they are good with thai spices and chilli dipping sauce, or great on a roast dinner with gravy :)
