Want to go to bed but need to cook mince!

I bought 2lbs of beef mince on Saturday. I couldn't fit it in the freezer so need to cook it tonight, or it gets chucked out. I was planning to find a recipe for bolognase and make that... But I'm feeling like death warmed up today for some reason and I'm now planning to do as little cooking as possible and then go to bed when I get home.
I've already phoned DW and requested she pop some baked potatos in the oven but I still have this mince. Can anyone suggest anything I can make with it that requires very little effort as I really dont have the motivation to make anything remotely taxing tonight. Even if I can just cook it or something to stop it spoiling and then add something to it tomorrow.
Any suggestions?

If its 2lbs of mince I would put it in the slow cooker with some onion and a couple of tins of tomatoes and let it cook overnight on slow. Turn it off in the morning. Tomorrow evening you can jazz it up in anyway you want to make it into a proper bolognaise sauce and just reheat it. (Or you could add some wine in the morning - if it is looking a bit dry - and leave it on low all day so that it only needs some minor re-adjustment before eating when you come home tomorrow if you are up to eating!) How about a chopped onion, a couple of tins of toms and a small bottle of beer. (The little French ones that people bring to BBQs and then ignore and drink the good stuff).
Slow cooker - all night and if you still feel s*** tomorrow it will be fine to eat. If on the other hand you are bright eyed and bushy tailed, you could play with it and add mushrooms or peppers or whatever you fancied.
