Cheat Christmas Cake

Took a short cut and bought a rich fruit cake which I intend to 'syringe' some alcohol into, roll some marzipan on top and then royal icing over it. Does anyone know the following:

1) Is it port/sherry or other that you put in Christmas Cake?
2) How much alcohol can you get away with adding? (hic!)
2) How long does Christmas cake last if it's kept in an airtight tin?

Thanks for your help.

Its brandy you add to the cake and if wrapped in greasproof and then tinfoil and sealed in a tin will keep for years - I kept my top tier wedding cake for over 2 years and then used it as a christening cake.
I just usually add enough to keep it quite moist and boozy - its trial and error I think! Made daughters 3 tier wedding cakes and they were ok too.

  • Thanks susank, I'll add brandy to the shopping list.
