Does anyone make harissa?

Hello,

I brought a jar of harissa back from my Tunisian holiday last year having never heard of it before. Since finishing off the jar I bought more in Tesco however it just isn't the same as the first one.

It seems to be simple enough to make and there are lots of different recipes out there on the net but the ingredients seem to vary considerably so I don't know which one to go for.

Do any MSE'rs have any tried and tested recipes to share?

  • Try an ethnic shop - tubes of harissa are only about 60p and last forever.

I've not had a chance to try it out yet but this is a recipe given to me by my ex-MIL and she tells me it's delicious:

Dried Chillies (no seeds) – Pour boiling water over and leave for 5 mins.
4tbsp coriander seeds and 4tbsp cumin seeds – toasted in a dry pan.
    Grind in processor.
    Add:
    2tsp salt
    ¼tsp paprika
    3 cloves garlic
    Chillies
Process and add 75ml olive oil

Spread over lamb and score if using a rack of lamb.

I have found it very hard to make also and my dh and dd1 eat it every day. I buy a couple of very large tins when I go on holiday every year and freeze it in ice cube trays. I know that won't help you. Have a look in Asian grocers and you will find it. It is quite pricey at about 99p for a wee tin, but you sometimes do find it on offer. Even my in-laws in Algeria who make everything from scratch, don't make it themsleves. It's just one of those things that seems hard to replicate.

I tried to make it once, and it wasn't the same. So I stick to buying it in my local shop either in a tin or tube, tubes of it are about 60-70p
At least the fish fingers are still frozen, that's what I keep telling myself (Truly Madly Deeply)
