Can i rescue my awful dinner?

Tonight i've cooked myself what's supposed to be cajun rice with beef (i've used pork), and it tastes awful! _pale_

I've used 500g of minced pork, basmati rice and diced red, green and yellow peppers, but the herb and spice mix i added tastes mostly of oregano and mint which i don't like very much. Not very cajun at all!

Can anybody think of a way i can improve the leftovers for tomorrow? It's far too much meat to waste.:(

    Does Cajun have oregano in it? Or mint?

    I did an awful dinner the other week, in fact it was 2, 1 meat version and 1 veggie version, it was when I had my sister and family here.

    No suggestions to rescue yours but sometimes you just have to bite the bullet and bin it.

    I was upset when I wasted all my food but it was a learning curve....don't try new dishes when you have company! Also I can see what went wrong so can now safely say if I cook it again I will not follow the recipe but do what I think is right!

    Could you put it into a sieve and rinse it? Then cook a chilli with it tomorrow - something with strong spices that should hopefully overpower it?

    <LI class=ingredient>1/3 cup kosher salt (not table salt)<LI class=ingredient>1/4 cup chili powder<LI class=ingredient>1/4 cup Hungarian paprika<LI class=ingredient>1 Tablespoon onion powder<LI class=ingredient>1 Tablespoon coarsely ground black pepper<LI class=ingredient>1 Tablespoon dried basil
    thats a cajun spice recipe

    i would add some paprika to start with, and some chilli powder, that should give it a spicier taste

    Thanks for the suggestions - i think i might try MaggieBaking's. It tastes overpoweringly of oregano which really wasn't what i was expecting for Cajun!

    I'd say chilli it too. A tin of tomatoes and a good helping of chilli powder. Neither too expensive so if it's still awful you can chuck it, and if it's ok then all ends well.

    I would turn it into a pork chilli by adding a tin of chilli beans and a tin of chopped tomatoes.

    Oregano does feature in cajun spicing but shouldn't overpower, but mint does seem odd! I; add paprika, cayenne, garlic and attempt to spice it up a bit to distract from the herbs!
